There are different chapters to my 4th of July memories. There were the years we went as a family to large picnic with friends, stopping first at the outlets on our way up and then meeting up for a day  of volleyball and delicious food. There were a few years with my high school cross country team at summer running camp up north, eating tcby while watching fireworks over the lake. Now that we are farther from family, we’ve started to make our own tradition, starting last year, with picking cherries.

Most of the memories I have don’t involve hours of cooking, but food is so important to getting together and spending time that this year I thought of the easiest dessert I knew how to make : fool.

It’s a real dessert, in fact a classic British summer dessert, traditionally made with soft whipped cream and stewed or macerated fruit. So the easiest way to make this is to use jam, whip some cream (you don’t want stiff peaks but a slightly softer consistency- but really you can do whatever you want) and mix the two together. Fresh fruit can be used as in this easy recipe, or you can make your own stewed fruit by cooking it down and then cooling… but that’s basically what jam is, right? Plus, we recently made strawberry jam that was a bit on the runny side (we aren’t perfect) but it is sooo delicious I would eat it by the spoonful – and I did. It mixes in easily to your whipped cream and can be stirred in as much or little as you like so that it has some gorgeous streaks throughout. I like it when dessert is pretty.

So, the basics of my recipe: whip  1c heavy cream + 1T sugar whipped until soft peaks form. Stir in 1/2c strawberry jam and spoon into cups, top with extra jam + enjoy. easy, right? hope you have a happy 4th!
