chocolatewaffles01The other day I got together with friends. Wait – that sounds boring and this get together was more exciting than that. One of my best friends from college was visiting family and stopped by with her husband on their way out of town. They are training for the Philly marathon this November, so we decided to go for a morning run and then have breakfast before they hit the road. We leashed up the dogs and headed to some trails for our run as the temperature slowly climbed.

With the satisfaction of a run behind us, we finished preparing the breakfast I whipped up before they arrived. While our cupboards were almost bare, we miraculously had the ingredients for waffles… but why just make regular waffles when you can make chocolate waffles? I mixed the batter for the waffles before our run and when we returned we simply had to pop them in the waffle maker. I found the recipe from the trusty Joy of Cooking and it is a simple wet + dry ingredient combo that is so easy to make:

whisk together dry ingredients:

  • 1.5c sifted flour
  • .75c sugar
  • .5c unsweetened cocoa powder
  • 2t baking powder
  • .5t salt

whisk eggs until frothy and then add remaining wet ingredients:

  • 2 eggs
  • 1c milk
  • .75c veg oil
  • 1t vanilla extract

add wet ingredients into dry and combine + cook!
